蠣油(ハオユー)、かき油ともいう。生がきのエキスに各種の調味料を加えて熟成させたもので、独特の風味と濃いうまみがある。煮物や炒め物の隠し味に少量加えるとコクが増す。炒め物には鍋肌から回し入れて焼き付けるようにする香りがたつ。
